Almond Roca

Add butter, sugar and Almonds into a non-stick pan on medium heat. What ever you do don't stop stirring. I was told this is very important. For about 20 minutes all you do is stir.

This is about 7 minutes in. It's starting to bubble a little. Are you sure were making Almond Roca? Don't ever stop stirring.

And just like that is starts to turn this nice golden color. It took about 20 minutes.
Pour into a small cookie sheet.
Let slightly cool and then score with a little cutter. It will make it easier to cut up when hardened.
Melt chocolate over double broiler and slather on top of cooled Almond Roca. Add the chopped walnuts. Repeat on other side.

1 lb. butter
2 cups sugar
2 large handfuls of almonds cut in half by hand
2 cups very fine chopped walnuts
8 oz. Hershey's chocolate
wooden spoon

The best part about this recipe is making it with someone special.
